Hello,
I have worked on numerous SAP implementations, primarily SD, MM, and FI/CO in the role of technical analyst / ABAP developer. However I am doing my first PS implementation. Can anybody please point me at some good documentation / books that provide an overview of PS ... e.g. business process, key data entities, linkages to SD & MM, key tran codes and tables, etc.

You can see it on pmi.org . Download PMBOK and study it.

PRPS - WBS Elements ( use the field PSPHI for relation with PROJ )
AFKO - Net Work headers
AFVC - Net Work Activities
JEST - Status of WBS and Activities ( based on object, PRPS-OBJNR )
COSP - Primary Costs ( based on objects )
COSS - Secondary Costs ( based on objects )
EBAN - Purchase requisitions
